200 gr of light or dark green zucchini
3 tablespoons of Gentile extra-virgin olive oil by Cartechini
Salt to taste
Pepper to taste
240 gr of corn&rice penne pasta by Pastificio La Rosa
Grated 24 months aged Mountain Parmigiano Reggiano cheese by Caseificio 993 to taste
Fresh basil to taste
Dice zucchini and sautee them in a pan with 2 tablespoons of oil for about 7 minutes.
Season with salt and pepper, then drain on kitchen paper and let it cool.
Cook the pasta, drain, and cool under tap water.
In a bowl, mix pasta, zucchini, a little bit of Parmigiano Reggiano, the chopped basil and the remaining oil.
Decorate with basil leaves and serve.
