Maccheroncini with ciauscolo spreadable salami

Ciauscolo is an incredible ally in the kitchen as it can be enjoyed spread on fresh bread, sliced for your cold-cuts platter…. or in your pasta sauce!! Let’s cook this recipe together, you won’t believe how simple yet tasty it is.

Ingredients for 2 people:

Procedure:

Cut four slices of ciauscolo, get rid of the casing and break the slices down with your hands. Heat one spoon of extra virgin olive oil in a pan, with crushed garlic cloves and chilli pepper flakes. Add the ciauscolo and cook for about 10 minutes, stirring from time to time. Meanwhile, boil water in a large pot. When it starts to boil, add salt and pour the pasta.Now, go back to your pasta sauce and add two peeled and diced tomatoes. Cook the sauce for an additional 10 minutes. When the pasta is ready, drain it and transfer it into the pan with the sauce, stirring. Add some fresh basil leaf, if available, and black pepper if needed. Grate abundant Parmigiano on top and serve the pasta while still hot.
