Spelt penne pasta with bell pepper cream, button mushrooms, and ginger

Enjoy this vegan dish with spelt pasta; it is good for health and everyone likes it!

Ingredients

450 gr of red bell peppers (about 2 small bell peppers)

160 gr of button mushrooms (about 4 medium-large button mushrooms)

220 millilitres of water

240 gr of spelt penne pasta by Mulino Val d’Orcia

2.5 tablespoons of Gentile extra-virgin olive oil by Cartechini

Salt to taste

Freshly ground black pepper to taste

Ginger powder to taste

Fresh herbs to decorate

Method

Dice bell peppers and mushrooms.

Sautee bell peppers in a non-stick pan over high heat for 5 minutes, pour in the water, and cook for additional 5 minutes or until the water has evaporated.

In the same pan, sautee the mushrooms for a few moments.

Blend the peppers with the oil, salt, and pepper.

Cook the pasta, drain, and dress it with the bell pepper cream.

Before serving, drizzle with a little oil, add the mushrooms and a little ginger, and decorate with herbs.
