CULTIVATION SYSTEM: white fermentation, in the absence of the skins at a controlled temperature of 20 ° C. Aging: in steel tanks for a period of 1 month. Second fermentation: Martinotti method (Charmat), which provides for a slow natural refermentation in autoclave at a temperature of 12-14 ° C with a brief pause on the lees to preserve the fruitiness.
HARVEST: first ten days of September
CHARACTERISTICS: A pale straw yellow color with green reflections, with the fruity note with apple, pear and peach on the top, and a delicate hint of rose and acacia flower; in the end stands out a faint vegetal note.
You can feel the sweet and soft note which then gives way to the acidic note, limoncina. It is a wine to be drunk preferably within the year. It should be kept in a cool and dry place away from light. Long refrigerator stops should be avoided.
PAIRINGS: Ideal as an aperitif, it goes well with fish appetizers, shellfish and clams. It goes well with cream desserts and fresh fruit.

The star of the Bepin De Eto winery is the Conegliano Valdobbiadene Prosecco Superior Extra Dry vintage. Behind this name lies a hidden vine with a short name, the Glera, a semi-aromatic white berry with particularly golden berries. It is the grape that gives rise to each Prosecco, but as always the difference is made by the ‘terroir’ (land) and man’s choices.
