Cremini (deep-fried custard) is a classic finger food from Le Marche region, spread and beloved in the whole country. Together with olive all’ascolana, cremini can be enjoyed in the traditional mixed fried platter. Generally served at the start of the meal or as a side to other fried foods, such as lamb and vegetables, Le Marche mixed fried platters are always a huge hit!
The secret lies in the balancing of taste, the slight bitterness of the stuffed olives meets the sweet note of fried custard for a great combo of flavours.
