Olive all’ascolana is an Italian all-time favourite finger food. These deep-fried stuffed olives from Le Marche region are well-known all over the “boot.” Finally, they are available for you to try in Hong Kong!
Our producers, Eccellenze Ascolane, come from Ascoli Piceno, the native land of this finger food. In their artisanal laboratory, they locally source their ingredients and only use organic olives to enhance the nutritional properties and natural taste. The procedure could not be easier:
1) Find the tastiest and biggest olives you have ever seen (the big variety used in Ascoli is difficult to find anywhere else!)
2) Stuff the olives with high-quality meats, parmesan, pepper, herbs, spices…
3) Deep-fry them until golden and crispy
Well, the recipe might be a little more challenging than expected, and that is why I brought them over to Hong Kong for you to try.
Packaging: olives are frozen to preserve freshness and guarantee better results after frying. They are sold in packages of 250g. Storage conditions for frozen goods: -18°C.
How to cook them: deep fry the frozen olives for 5 minutes or bake them for 7/8 min at 200°C.
Ingredients: pickled green olives, stuffing (cooked beef, pork, chicken), Parmigiano Reggiano, eggs, butter, extra virgin olive oil, celery, onion, salt, lemon zest, nutmeg, cloves, breadcrumbs, type 0 flour, pasteurized eggs, egg white. It might contain traces of nuts.
Tip: olives always come with a companion, cremini (deep-fried custard).
