Acetaia Paltrinieri started to produce the first barrels of balsamic vinegar as early as the beginning of 1800. This 200-year long tradition that has now spread all over the world remains faithful to the original product from Modena.
The scent of their vinegar comes from the 1000 barrels of their production, where the product is decanted and replenished. These are made of durmast, chestnut, mulberry, acacia, ash, and juniper wood.
