This great combination of organic cereals (spelt and barley) and legumes (lentils) is grown in the valley of Mulino Val d’Orcia, on the gentle Tuscan hills.
“Pearled” spelt and barley are particularly popular because the outer layers of the bark are eliminated. This process allows you to reduce cooking time without losing any fundamental nutritional principles.
The many nutrients of this combo include iron (fights anemia and exhaustion), calcium, phosphorus (useful for memory), and zinc (fights free radicals and stimulates the immune system). The mix, tasty and nutritious, is ready in 20/25 minutes and can be enriched with mixed vegetables, mushrooms, and spices. Ideal if accompanied by croutons.

CEREAL SOUP: Add garlic, ginger, and chili pepper to olive oil in a pot on low heat. Combine the mix with other cereals and/or legumes (try our organic pearled barley or spelt!), add some tomato sauce (Biofavole puree is our top choice), herbs (don’t forget rosemary!), and spice. Stew until the beans are soft and enjoy an incredible treat.
REFRESHING SALAD: Cook the mix, drain it and let it dry. Add cherry tomatoes, fresh celery, olives, capers, carrots, onions, beans, tuna…. Experiment with combinations and discover your favorite spelt salad! Great on hot days and served in small bowls as an aperitif or at parties.
