This organic pearled spelt is cultivated in the valley of Mulino Val d’Orcia, along the gentle Tuscan hills. Famous among cereals for being the less caloric one, spelt is an ideal main in soups and salads. Highly nutritious and rich in fiber, spelt regulates hunger and digestion.
“Pearled” spelt is particularly popular because the outer layers of the bark are eliminated. This process allows you to reduce cooking time without losing any fundamental nutritional principles.

CEREAL SOUP: Add garlic, ginger, and chili pepper to olive oil in a pot on low heat. Combine the spelt with other cereals and/or legumes (try our organic pearled barley or legumes and cereal mix!), add some tomato sauce (Biofavole puree is our top choice), herbs (don’t forget rosemary!), and spice. Stew until the beans are soft and enjoy an incredible treat.
REFRESHING SALAD: Cook the spelt, drain it and let it dry. Add cherry tomatoes, fresh celery, olives, capers, carrots, onions, beans, tuna…. Experiment with combinations and discover your favorite spelt salad! Great on hot days and served in small bowls as an aperitif or at parties.
