HISTORY: Le Colline winery is the epitome of small-scale farms and a deep connection to the territory, its cultural heritage, and traditions. Operating according to the principles of organic farming, this little farm is the common project of a group of young and creative farmers from the Marche region, Central Italy. Their orchard includes tomatoes, seasonal vegetables, and herbs, which they deliver door to door.
We got in touch with them because they incarnate the same values that we are looking for: high quality and ethical means of production. Their vineyards are naturally cultivated without the use of pesticides or chemical treatments. Nature runs its course, and their grapes are the true expression of this beautiful territory, spread out on gentle hills overlooking the Adriatic Sea.
VINEYARD: The vineyard is located along the hills of Tolentino city, home to the traditional Maceratino, ancient and noble local vineyard. Le Colline’s vineyard, young and dynamic, is run according to modern technologies which respect nature and tradition. Different kinds of vines are cultivated there: Montepulciano, Sangiovese, Chardonnay, and Sauvignon.

VINIFICATION: preparation of the sparkling wine base with white vinification of the grapes at the right acid/sugars ratio and fermentation at 15°C. Foaming with the Martinotti method with a 6-month stay on the lees (Charmat Lungo) at 12°C.
CHARACTERISTICS: brilliant straw yellow colour. Balanced in the foam with fine perlage and rightly persistent. The nose is striking for its citrus note, followed by hints of yellow-fleshed fruit, hawthorn, and boxwood flowers. Rightly acidic and savory, it has a slight almond finish. Discreet but elegant
