Fabriano salami has a medium-long maturation, characterized by a fine paste composed of lean shoulder, minced ham, and other non-fat parts of the pig, enriched with quadrangular white corals, obtained from the cut back lard, and flavored with red wine or white. The product is then flavored with ground pepper and grains, garlic mixed with local wine and stuffed into natural casings. Hand-tied, it passes through a short phase of drying and subsequent seasoning. Depending on the type of casing, the size changes, from 0.5 to 1 kg.
GENERAL DESCRIPTION : pork (shoulder, bacon and lard), minced, salted, spiced, stuffed and seasoned. Maturing in microclimatic conditions gives the product valuable organoleptic characteristics.

The product does not contain allergens.
Storage conditions: store in a cool place, + 15°C max (+ 4°C max if packaged). The vacuum-packed product expires within 4 months. The whole product should preferably be consumed within 6 months from the date of production.
